Today I made fudge for the first time ever - rather amazing, actually, since I LOVE to cook desserts. I’d always thought making fudge was really hard, but these recipes were pretty easy. I made three different kinds, and on a scale of 1-10 (with 10 being highest), I would score them at 8, 9 and 10. So I’ll give you the ones that made a 9 and 10 (in my opinion.)
Hersman Chocolate Fudge from Lynda Hersman (my mother-in-law)
1 1/2 cup sugar
2/3 cup evaporated milk
2 Tbsp. butter
1/4 tsp. salt
2 cups mini-marshmallows
1 1/2 cup chocolate chips
1 tsp. vanilla
Line a 8×8 or 9×9 pan with foil. Boil first 4 ingredients for 4-5 minutes, stirring continuously. Remove from heat. Add last 3 ingredients. Stir vigorously for one minute (until marshmallows melted.) Pour into pan. When fudge is firm, remove from pan and foil and cut.
German Chocolate No-cook Fudge from “100 Best Chocolate Recipes” (slightly modified by me!!)
3 packages (4 oz each) German sweet chocolate, broken into pieces
1 cup (6 oz) chocolate chips
1 can (14 oz) sweetened condensed milk
1 cup chopped pecans
2 tsp. vanilla
36 pecan halves
Line 8×8 pan with foil. Microwave chocolate and chocolate chips on high for 1 minute. Stir, then microwave at 30 second intervals with stirring inbetween, until melted and smooth. Add milk, chopped pecans and vanilla. Stir until well blended. Pour into pan. Score into squares with knife. Place one pecan half on each square. Refrigerate until firm. Remove from pan and foil and cut into squares (use score marks.) Store in fridge.
