Superbowl snacks

This weekend is the Superbowl, and even if you aren’t going to watch it, you may be participating in a Superbowl party. So here are two easy and yummy foods to bring.

Cream Cheese Cheater Brownies - Becky Robey

1 Package Martha White Brownie Mix29819236-l.jpg
1 can cream cheese frosting
1 egg
vegetable oil
milk
1 bag of chocolate chips

Mix the package of brownie mix according to the directions BUT substitute milk for the water. Add 1/2 of a bag of chocolate chips. Bake according to directions on package. While brownies cool, melt 1/3 cup of chocolate chips in a small bowl. Add the frosting and stir gently creating a swirled effect. Frost the cooled brownies and cut into squares.

Super Nacho Dip from Rinnie’s Aunt MaryLou

1 lb. groud beef
1 medium onion, chopped
1 package taco seasoning
8 oz can tomato sauce
1 can refried beans
1 cup grated cheese
1 small can chopped chilis
8 sliced black olives
3 chopped green onions
1 can frozen avacado dip or 1 carton guacamole
1/2 cup sour cream

Brown meat and onion. Add taco seasoning and tomato sauce and simmer for 10 minutes. Spread beans on bootom of 10″ dish. Top with meat mixture, chilis and then cheese. Bake at 350 for 20 minutes (until cheese is melted and bubbly.) Remove from oven and top with sour cream and then avacodo. Sprinkle with olives and green onions. Serve with Tostitos.

My husband loves this dip, and is always very happy when I make it. You can always eat leftovers in a tortilla as a taco, too.

Scones

Scones are one of those foods that I’ve read about in books, but never really knew what they were. A couple months ago, all the ladies in our family took my British Grandmother-in-law out for High Tea for her birthday. And I finally had a scone, and it was pretty good. So now you can try them, too.

2 cups Flour
1/4 cup Sugar
2 teaspoons Baking powder
1/2 teaspoon Salt
6 tablespoons Chilled butter
1/2 cup Dried cranberries
2 teaspoons Grated lemon peel
2/3 cup Buttermilk
2 teaspoons Milk
1 teaspoon Sugar

Combine the flour, 1/4 cup sugar, baking powder and salt. Cut in the butter until crumbly. Stir in the dried cranberries and lemon peel.

Pour in the buttermilk and stir with a fork until the mixture holds together. Gather the soft dough into a ball and gently knead a few times on a flour surface.

Pat out dough to an 8-inch circle and cut into 8 wedges. Place 2 inches apart on a greased baking sheet and brush the tops with the milk. Sprinkle with 1 teaspoon sugar.

Bake in a preheated 425-degree oven 15-20 minutes, until golden. Serve warm.

For glaze:
1/2 C. fresh lemon juice
2 C. confectioners’ sugar, sifted
Zest of 1 lemon, finely grated
1 T. unsalted butter

To make glaze, mix lemon juice and confectioners’ sugar together in a microwave-safe bowl. Stir until sugar dissolves. Add zest and butter.

Microwave for 30 seconds on high. Whisk the glaze until smooth and drizzle over the tops of the scones. (Or make glaze in a double boiler.) Let sit a minute before serving.

“I look back at my life only two years ago, before I became involved at UPC, and I would have never imagined that God would be as big in my life as he is today. I grew up what I thought was “Christian”, going to church on the major holidays, Christmas and Easter. I did well in school and athletics and was accepted into UCF. My life was going really great.But I look back now and I notice that something was missing. I had no relationship with God and I didn’t even know what that looked like. I had no idea what it meant to pray, I grew up in a Catholic family, and we were always taught to just memorize a few prayers and say them.

Today, God has lead me to an amazing college group called RUF (Reformed University Fellowship). Through church, RUF large group meetings, and Bible studies I am learning what it means in my life to pray and study the Bible.

Over the past few months, I have started to understand what it means to find rest in God and Jesus. I am a very strong mindset individual, and at times I want to take my life in my own hands and handle things that many college students struggle with (relationships, school, friends, loneliness). But after every situation I am soon faced with the fact that taking these tasks on by myself is not only stressful but impossible!I am always afraid of what God’s plan for my life will be like. Being in college, it is so unclear as to the path he wants me to take, but I know that I need to slow down and not worry so much about my future because it is in God’s hands.

A lot of what I am saying may sound like your typical Sunday School answers but in any case relying on God and finding rest in him is a lot more difficult than I had ever imagined it too be. Thankfully UPC and RUF has provided me with such a strong Christian community that I find myself not only learning about Christ, but sharing what I have learned to others and trying to get other college students plugged into this great community. Today I think of my spiritual life as walk that I have began with God. The path is long and my knowledge of him is growing as we walk along.”
