I was thrilled to hear these brownies were a big hit at the Craving Grace Event. I got the recipe from Covenant College’s cookbook (they’re called “Thunkies Double Chocolate Brownies” in that cookbook, but I thought the name was too long!!) They’ve been a winner every time I make them, and are especially good hot out of the oven with some vanilla icecream.178466.jpg

Super Chocolate Brownies
2 cups flour
2 cups sugar
1/4 cup cocoa
1 tsp. baking powder
1 tsp. salt
4 eggs
1 cup oil
2 tsp vanilla
2 cups chocolate chips

Mix dry ingredients, add wet ingredients. Add chocolate chips, and mix it all together. Pour into greased 9×13 pan. Bake at 350 for 30 minutes.

Andrea I met Andrea (pronounced Ahn-dree-uh) about…4 years ago I think, through Karin Tome. They are roommates and have known each other forever! If you know Karin, then you need to know that they are opposites in just about every way. Yet their friendship is strong.

Andrea is a sweet godly woman; shy at first until you get to know her. But she definitely has a playful side to her, as in playing jokes on good friends.

How long have you been at UPC? I have been at UPC for 3 years.

Where are you originally from? I was born in Mobile, Alabama but soon after we moved here. I have grown up in the Orlando area.

What are you hobbies/interests? I love to do absolutely anything outdoors. I like to run to stay in shape and I really enjoy playing tennis. I love to go hiking and camping, and I love the beach.

Favorite dessert? I am really not picky when it comes to desserts. Ice cream is probably my favorite, though.

How have you seen God work in your life? What a tough question to answer - He has worked in my life in so many ways! I have seen Him clearly lead me to become an elementary school teacher and then He has given me the patience and wisdom I have needed along the way. He has blessed me with some amazing friends and used them to teach me so much about life and about myself. I am definitely a perfectionist and a worrier, and I have seen Him work through circumstances to stretch me in these areas to trust Him more. I still struggle with these issues but I see small steps of growth. I just love that every day is an adventure and a new opportunity to see God work. (Editors note: as a recovering perfectionist and worrier, I understand.)

How can we be praying for you? You can pray that God would reveal my future to me. I am unclear as to where He is leading me. You can pray that I will be diligent in my personal time with God - learning to be still before Him.

Women’s Weekend!!!

We had a great time with SAK on Friday night. They’re ALWAYS funny, in my opinion! Even funnier, I thought, was that there were 3 men performing for a room full of women! Anna and her cell phone cracked me up! She did a great job with her performance up front!

Sak Tonight

Well, we usually try to put up something fun or funny on Friday’s, but tonight Sak will be at the church to perform for the women’s retreat.

And since they are much funnier than any post, I’ll just leave it at that.

Angel Chicken

I got this recipe from a lifelong friend of mine, and it has become a favorite of our’s and Pam’s. In fact, Pam loves it so much I’ll say the recipe is from her!!

Angel Chicken from Pam Johnson

6 or cooked boneless chicken drumsticks (I usually use boneless, skinless chicken breasts)
10 3/4 oz can Cream of celery or mushroom Soup146558859_8bb0d1beb6_m.jpg
4 oz Light Cream Cheese
1/4 cup fat-free margarine
0.7 oz package Italian salad dressing mix
1/2 cup dry white wine (optional)

6 cup cooked angel hair pasta

Put chicken in crockpot. In pan on stove, melt margerine. Add all other ingredients (but noodles) and mix. Pour over chicken. Cook on low for 4-5 hours. Serve over angel hair pasta.

(7 Weight watchers points per serving if divided into 6 servings.)
