Jill’s Potpie

I read this recipe the other day on Jill’s health blog: Finding the Pieces to the Health Puzzle. I haven’t tried it yet, but it looks great!!

Jill says: This is so easy, yummy, and I love that it is made with such simple, pure ingredients. I can have my potpie without all the preservatives.

2 Tbs olive oil
1 medium yellow onion - diced
2 Tbs flour
1 1/2 cup chicken broth (I highly recommend an organic brand, or at the very least, make sure you get one that doesn’t have MSG in it)
1 bag frozen mixed veggies (I like the one with corn, peas, carrots, and green beans)
1 - 2 cups cooked chicken - shredded (depends on how much chicken you want…I personally like more veggies than chicken)
1/2 tsp salt
1/2 tsp pepper
2 piecrusts

Saute onion in oil for 3 minutes. Add flour, stirring constantly for 1 minute. Still stirring, add broth. Cook until thickened about 4 minutes. Add mixed veggies, salt, and pepper. Remove from heat.

Spoon mixture into bottom pie crust. Top with the other pie crust. Moisten edges and pinch down. Cut a few small slivers on top. Place pie pan on cookie sheet. Bake at 400 degrees until golden brown, about 15-18 minutes.

For the remaining chapters I’m going to do something different. Mostly because I’ve been out of the country and was not able to keep up with the weekly reading. I just started back up with Chapter 6, and I don’t want to rush through the book because there is so much to savor. Sheri and Ruthie filled in for me while I was gone.

How much do we really know about Gideon? Most of us might come up with the story of him challenging God with the fleece, but there’s way more to his story than that! We will look at the life of Gideon and be amazed at how God used him and loved him even though his faith was weak.

COME AS YOU ARE! It’s a great way to meet new people AND to hear God’s Word through other women’s stories.

Last week my girls and I were in Chattanooga, Tennessee for my youngest sister’s graduation from Covenant College, and to spend time with my parents and other siblings who came to visit. It was a really fun time.

One night my mom fixed this meal. The combination of sweet potatoes and black beans sounds rather gross, but is actually quite delicious. She says she often fixes this meal on Sundays after church because it’s so easy and quick.

Black Beans on Sweet Potatoes from Rinnie Hersman/her mom Liz

31 oz canned black beans (2 cans)
2 large tomatoes, chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp salt
3 cups cooked white rice
or 6 baked/boiled sweet potatoes

Add tomatoes and spices to beans and heat on stove or in microwave. Serve over rice or sweet potatoes.

Makes 6 servings.

Weight watcher points: 2 points per servings for beans, 2 points for rice and 5 points per sweet potato.

12 grains
