Potatoes as a Side Dish

I’ve had a couple recipes from the “Submit a Recipe” button - keep them coming. This is the latest one, and it sounds delicious.

Lindsey says: “This recipe is an easy side dish that is quick to put together. It is also my good friend Karin’s favorite!”

Ingredients:
-New Potatoes (aka red potatoes)
-1 pkt. Hidden Valley ranch dressing mix (not the dip mix)
- 1/8 cup olive oil

Directions:
-preheat oven to 350*
-cut potatoes into small, bite size peices
-place cut pieces into large ziplock bag
-add dressing pkt. and olive oil
-shake well
-put into 8×8 baking dish
-bake on 350* for 1 hour
-stir several times while baking

This dish goes well with most meats and fish. It is always a crowd pleaser at my house.

    As a connoisseur of food (translation = I like to eat), I can testify to Lindsey’s testification (is that even a word???) that these potatoes are INCREDIBLE. And the best part is that I can even cook them (which is saying a lot). No stove required. To which I say, dear Lindsey, May the Lord bless you and keep you, may the Lord make his face shine upon you….
