Growing up, Easter was a fun day for our family. I always remember waking up to Easter Baskets and going to Church. Which, for our family, was not a common outing for us. We usually just went to Church on Christmas and Easter and a few other times in between.
Marrying into Jason’s family brought about a much larger tradition. You see, he comes from a large family where everyone still lives in the general area where he grew up (outside Atlanta). So, they all come to his parent’s house for a BIG celebration! And when I say “All”, I am talking Aunts, Uncles, cousins, and even 2nd, 3rd and 4th cousins! It’s probably about 50 people! Everyone gathers at their home sometime after church, we eat a huge potluck lunch, and then the kids partake in a very large, and expansive Easter egg hunt. It’s a lot of fun! Are you wearing green today?
While I don’t know much about St. Patrick and couldn’t find much about him online either, I did read that today is believed to be the day of his death. He is also the patron saint of Ireland and it appears that he was active as a missionary in Ireland during the second half of the fifth century.
By the way, St. Patrick’s Day in Ireland is not celebrated in the same manner as we American’s celebrate. My Irish friend told me that once.

Chicken Enchiladas from Dianne Webb
1 whole chicken (2 lbs) cooked and chopped up
1 can mushroom soup
1 can cream of chicken soup
1 pint sour cream
3 cups chedder cheese, shredded
2 cans chopped Ortega chilis
½ cup chopped green onions
9 or 10 flour tortillas
Mix all the ingredients except tortillas and 1 cup cheese. Roll ½-1 cup of mixture in a flour tortilla and place in 9×13 pan. Spread remaining mixture over the top of the enchiladas. Sprinkle with other cup of cheese. Bake at 350 for 30 minutes.
