Dessert Canceled

Due to the unpredictable weather from Tropical Storm Fay, the storm that won’t go away, we are canceling the Grab & Grow Dessert scheduled for this evening (Friday) at UPC. Please help spread the word!

Also - just another reminder that we go back to two services this Sunday - 9:00 a.m. & 10:45 a.m. !!

How long have you been at UPC?
About 3 years

Where are you originally from?
That’s a good question. I was born in Abbotsford, British Columbia, Canada. Moved to San Bernardino, CA when I was 6 months old. Moved to Orlando, FL in 1991 in the great Campus Crusade move!

What are some of your hobbies and/or interests?
Swing Dancing, Interior Design, Crafts

What’s your favorite dessert?
Whoopie Pies….a Pennsylvania Dutch Dessert :-)

Favorite TV show?
Just one? LOST and Bones

What are you involved with at UPC?
Bible Study with Karin Tome

How have you seen God work in your life recently?
Funny you should ask. The job He provided after graduating college has been taken away. I was laid off because of the slowing economy. So, I’m looking to see what’s next.

How can we be praying for you?
That I can find a job soon and just continue to trust that God knows where I’ll end up working.

Baby Back Ribs

I got this recipe from Cathy Martin, and they are awesome.  My husband loves them, they’re easy, and you can often find them “buy one, get one free” or on sale - I’ve found them at Albertsons and at Winn Dixie that way (which helps me not spend a fortune on them.)


Baby Back Ribs from Cathy Martin/Rinnie Hersman
4 lbs baby back ribs
1/3 cup brown sugar
1 Tbsp paprika
1 1/2 tsp chili powder
1 1/2 tsp salt
1 tsp cumin
3/4 tsp pepper
3/4 tsp white pepper (I just used black pepper)
3/4 tsp oregano
1/2 tsp cayenne powder
1/4 tsp sugar (I skipped this)

Mix everything but the ribs together. Wash the ribs and cut off any really fatty parts and pat dry. Rub the spice mixture into the ribs - front and back, top and bottom. Stand up in a crockpot around like a crown with the meatier side out, nest together as needed. (If there is a lot of space in the middle, could put a pyrex container in the middle to keep them upright.) Cook on low for 6 hours (or so). Meat should fall off the bones. May serve with BBQ sauce if you want. Goes great with potato salad, sweet potatoes, or baked potatoes.

And speaking of not finishing the book…well, I did finish it, but this week has not been one that’s allowed me to think through and write. So, here’s my question for those who’ve read it, either now or in the past: What is the most meaningful thing you’re taking away from Bravehearts?

Meet Christy LaLonde!

Christy is not only famous for her announcements at UPC, but she is also a new contributer to the blog!

How long have you been at UPC?
5.5 years

Where are you originally from?
I was born in Hillsdale, Michigan, but only lived there for about a year. I spent most of my childhood in Wisconsin and have now lived in Florida for 11 years, which I think makes me a Floridian.

What are some of your hobbies and/or interests?
I love being outside…especially hiking. (Unfortunately Florida isn’t always the best place for that.) I love a good book, scrapbooking, making greeting cards and writing. I love spending time with my husband Johnny, my dog Maya and friends.

What’s your favorite dessert?
Carrot Cake…however cheesecake is a close second for me. Especially the white chocolate raspberry truffle from The Cheesecake Factory.

Favorite TV show?
I have several favorites: LOST, Scrubs, The Office, Top Chef, The Dog Whisperer, What Not to Wear, Dirty Jobs

What are you involved with at UPC?
I sing 1-2 times a month with the praise band, Johnny and I do the announcements every week, I am in a LIFE group and I am excited to begin contributing to the Women’s Ministry Craving Grace Blog.

How have you seen God work in your life recently?
Recently God has been reminding me that my identity and security come from being His child, not from other people or the things that I do.

How can we be praying for you?
For direction in my job/career path. (I do not know what to do with my life.)
