Pecan Crispies

Pecan Crispies - Alisa Villarreal

2 sticks of butter
1 cup brown sugar
1 cup chopped pecans
13 graham crackers (whole)

Heat oven to 350 degrees. Place graham crackers on a cookie sheet covering the entire surface. Take butter and brown sugar and bring to a boil for 2 minutes. Add pecans. Spread over graham crackers. Bake 5-8 minutes. Cool and split at marks, ENJOY!

Peanut Butter Cookies

These were also at the women’s retreat. They’re one of my husband’s favorite cookies. They also work well to cut out shapes with your kids (add a little extra flour to make it easier to roll them out.)

3/4 cup peanut butter
1/2 cup shortening
1 1/4 cup brown sugar
3 Tbsp milk
1 Tbsp vanilla
1 egg
1 3/4 cup flour
3/4 tsp salt
3/4 tsp baking soda

Combine first 5 ingredients and mix well. Add everything else and mix. Roll into balls and put on cookie sheet (you can squish them with a fork if you want to.) Bake at 375 for 7-8 minutes.

Gingersnaps

These cookies were eaten by 2 of the small groups at the retreat. One lady said she thought they should cook a little longer. (What can I say, we like our cookies almost raw.) So if you like your cookies more well done, cook them a few more minutes.

1/2 cup margerine
1 cup sugar
2 Tbsp brown sugar
1 egg
1/2 tsp vanilla
1/2 tsp salt
1 tsp baking soda
1 1/2 tsp ginger
2 tsp cinnamon
1/2 tsp ground cloves
2 cups flour

Cream margerine and sugars. Add egg and vanilla, and mix. Add spices and then flour. Mix cinnamon and sugar in a bowl. Shape cookies into balls, roll in cinnamon-sugar and place on cookie sheet. Bake at 350 for 10 minutes.

Molasses Crinkles

Mix together:
¼ cup melted butter
¼ cup of molasses
1 cup sugar
1 egg

Add:
¼ teaspoon salt
2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon ginger
2 cups of flour

Roll cookies into balls. Roll in sugar, place on greased cookie sheet. Bake at 350 for 12-15 minutes. Makes 2.5-3 dozen cookies.
