Oven Baked Chicken

1/4 cup milk
1/3 cup flour
1/3 cup bread crumbs
1 tsp salt
1/2 tsp paprika
1/2 cup melted butter
1 cut up chicken

Combine flour, bread crumbs and seasonings. Dip chicken in milk and then coat with flour mixture. Place on baking sheet and pour butter over each piece of chicken. Bake at 375 for one hour.

German Pancakes

Best ever Sunday Brunch German Pancakes”

1 stick butter/margarine (1/2 cup)
8 eggs
1 cup flour
1/2 tsp salt
1/2 cup milk

Melt butter/margarine in 9×13 pan in oven (I like the stoneware for this.) Mix rest of ingredients in blender. Pour in pan and bake at 450 for 20 minutes. Cut into squares and serve hot with syrup.

Rinnie: We loved these growing up, and called them Couches and Chairs (because of what they look like when you serve them.) They are also known at Dutch Babies - not sure where that name came from!!

Angel Hair Tomato Pesto

Here is a simple meal that may help counter all the many sweets and elaborate foods we eat during these holiday times. Lori’s comments were “delicious, yummm!”

1/2 package angel hair pasta

1 garlic clove, minced

1 cup broccoli

3/4 cup tomato pesto

1 Tbsp olive oil

parmesian cheese

Cook pasta according to package directions (add broccoli and garlic.) Drain pasta mixture. Add olive oil and tomato pesto and toss. Serve with parmesian cheese sprinkled on top.

No Guilt Fish and Chips

2359.jpgNo-Guilt Fish and Chips from Gail Matthews

2 large baking potatoes scrubbed and cut lengthwise into 16 spears each
3 Tbsp Old Bay seasoning
1/2 cup yellow cornmeal
4 (4oz) cod or haddock fillets

Preheat oven to 425. Spray the potatoes with nonstick spray. Place in a large ziplock by with 1 Tbsp Old Bay seasoning. Seal the bay and shake to coat. Transfer to a large baking sheet.

In same plastic bag, combine the cornmeal and remaining 2 Tbsp Old Bay seasoning. Shake to mix. Spray the fish fillets with non-stick spray and place in bag, shake to coat. Place in a single layer on the baking sheet with the potatoes. Bake until the fish is golden brown and flakes easily, and the potato chips are tender (about 25 minutes.) Makes 4 servings.

This sounds yummy and EASY! (Isn’t the grapic funny!!)

Creamy Taco

1 lb ground chuck, browned and drained
1 can chili
1 can Ranch style beans
1 can Rotel
1 lb velveeta cheese
1 pt. Whipping cream

Combine first 4 ingredients and simmer. Melt cheese and add whipping cream. Add cheese mixture to the rest. Serve as nachos or taco salad with lettuce, tomato, onion, etc. Can be served like Mexican pile-up. Serves 4-6.
